ENVS 498: Special Topics - Regional Food Systems
How can regional food systems promote environmental sustainability and social equity? We examine this question by reviewing social science research literature on food systems resilience, food sovereignty, food systems governance, food policy councils, food hubs, traditional foodways, and more. Organized as a seminar, the course involves reading multiple journal articles and/or book chapters weekly, preparing written syntheses, and critically discussing articles/books with colleagues.
Outcomes:
Critically assess opportunities and challenges to re-organize food systems towards social equity, environmental sustainability, and resilience at a regional scale.
Synthesize social science research literature on food systems through reading, oral discussion, and academic/professional writing to generate original insights into a scholarly question or practical dilemma.
Demonstrate facilitative leadership within a collaborative learning community.
