ENVS 398: Special Topics - Regional Food Systems How can regional food systems promote environmental sustainability and social equity? We examine this question by reviewing social science research literature on food systems resilience, food sovereignty, food systems governance, food policy councils, food hubs, traditional foodways, and more. Organized as a seminar, the course involves reading multiple journal articles and/or book chapters weekly, preparing written reactions, and critically discussing articles/books with colleagues. Outcomes: Describe opportunities and challenges to re-organize food systems towards social equity, environmental sustainability, and resilience at a regional scale. Engage with social science research literature on food systems through reading, oral discussion, and writing. Co-create a collaborative learning community with colleagues.
